I got hooked on Colatura di Alici via a recipe from Noma's Nadine Redzepi — a simple homemade pizza that featured mushrooms marinated in their vegan garum. Not able to obtain their garum (it sells out quickly), I opted for the modern version of traditional roman garum, Colatura di Alici. Unfortunately, due to its laborious creation process, it's about as expensive as printer ink. With shipping the most popular brand — the one in the tall, thin bottle — is about $30 for just 100ml. Using it, however, is a game-changer. That pizza recipe was revelatory. As was a simple recipe for spaghetti con la Colatura di Alici. Finding this brand, which is made in the same region and with the same process, was a godsend. It's still expensive, but far less so than the other brand. And it tastes just as good, if maybe slightly less intense. But then a little still goes a long way. And, no, traditional Vietnamese fish sauce is not an alternative (though it is essential for many other dishes).

Great for Jansson's Temptations
It hard to find in my area, just what I wanted for Christmas.
Well executed presentation..anchovies wrapped around capers packed in olive oil. The meat(anchovy) maintains its integrity while many competitors melt away when attempting to present for company.
There is something wrong with this product. It is the first time I have ordered from this vendor, so I'm beginning to wonder if the problem is in the way they have stored or handled it. I don't know. This is a pack of 18 two-ounce cans of King Oscar anchovies in olive oil. We used to get them in the grocery store, but they haven't been available lately, so I thought I'd try through amazon. The PROBLEM: When we first open the can, they appear to be good -- the color is reddish. But when I reach in and try to peel out one anchovy, the consistency is mushy. Some of them are almost whole, but about half of them sort of disintegrate in my fingers, especially at the ends. They have turned to mushy paste. What is wrong? Is it that they have been shaken up terribly? Is it that they have been stored in a warehouse over 100 deg F? We have tried every brand of anchovy on the market, and have always sworn by King Oscar as being the absolute best. But this is such a disappointment. We have gone through seven of the eighteen cans, and feel that we cannot return it. But we are unhappy and I just wanted to report this.
