I like Lo Mein. I always hated devious cooks who hide the one ingredient or technique that really makes a dish, thus insuring their version is unbeatable. I can understand why oriental restaurants keep those as trade secrets, so home cooks have to get it from the restaurants to get the real deal, but it undermines sales of the folk who craft those ingredients. The internet lifted that veil by making authentic recipes searchable and providing the opportunity to obtain those ingredients by means of doorstep delivery. I hope the greed of diseased psychopathic egos doesn't destroy the world just when it's started to get good.
