Add 1/4 cup sugar, 1 cup heavy cream, and 1 teaspoon vanilla (I use a good quality paste) Reserve 1/2 cup. Freeze the rest in shallow ice-cube tray. Add frozen cubes and reserved liquid mixture into Vitamix. Turn on low and increase speed. Add more milk if needed. Takes less than a minute to create delicious ice-cream! Days later, my leftovers in the freezer did not form ice crystals. I plan to experiment and increase the Perfect Gelato... to maybe 3/4 teaspoon.

I love Gelato. I really like this!
Admittedly, I haven't had gelato much. Like maybe 2-3 times in my life. So I could be off in my review but I think it was delicious. It reminds me of a thicker, smoother, creamier sherbet. It has the zing of strawberry fruit that sherbet has. But it's creamier and meltier. It didnt actually get hard in my ice cream machine, even after churning 40minutes (it never got any harder after 35min). I just blended a mix pack and 1.75c of 2%milk and then ran the ice cream maker for 40 min. It got firm like a thick pudding. But never hard. We served two adults and 3 kids from one packet and everyone raved about it!
 Sweet strawberry taste with a thick gel consistency. The mix took longer than your typical mix to completely dissolve but the results were yummy! The strawberry was a hit with both of my kids and there was no leftovers in the machine!

Mine arrived with both of the bags filled with completely clumped up mix. I tried following the instructions and "whisked" the clumped rocks with some milk, and it just wasn't working. The chunks are too hard for a sifter, so I used a ice-hammer to crush them, and re-mix them in... but even then I could not get the mix to dissolve into the milk. About 30 minutes I gave up and used this mix to make gelato the normal way - with heat. I heated it up on medium low on a stovetop and continued to whisk - after the slurry reached about 110 degrees F, the rocks finally all dissolved. I took it off the heat, put it in the freezer, and it separated when cooling... so I had to whisk it again before putting it in the ice-cream maker. The resulting ice-cream is... okay. It's very, very creamy - I think it tastes like it does due to a very high fat content. There's certainly a pleasant amount of vanilla, and it's not bad... but I can't think of any reason to buy a non-functional gelato mix that is priced this high. I ordered this June 2022, and supposedly it's best before July 2024.
This review is for the vanilla flavor gelato mix. I am unfortunately not impressed with this product. First, both bags of the mix came solidified, such that the product consisted of several large chunks that were very difficult to break up and dissolve, despite use of an electric hand mixer, as well as trying to crush the large chunks with a wooden spoon and between two metal spoons. We did ultimately break it up and get the material to dissolve, but it took quite a bit of work. I suspect that most of the packages don’t have that issue but mine did. Once dissolved in the milk, as instructed, we added this to our ice cream machine, and it froze up nicely over the following 30 minutes. The texture is very nice. It has the smell and taste of vanilla pudding mix and/or the smell/taste of powdered milk. While I think that it came out as expected, and again it had good texture, I did not like the taste enough to finish my serving, nor did my son. I plan to return to making ice cream with cream and milk, without this mix in the future. Sorry to say that I cannot recommend it. I seem to see better reviews here for the other flavors, so choosing another flavor might be the way to go.
I like both ice cream and gelato, but I’d say I like gelato better if I can only choose one. However there are much less gelato shops than ice cream places. I cannot find fresh gelato shop nearby, although there are many ice cream shops around. You can imagining how excited I am when seeing this gelato mix. I can make and eat gelato at home! The preparation is extremely easy, and the only additional ingredient I need to get is milk. I used plant based milk with the same ratio as suggested in the instruction. It turns out to be very successful. I got vanilla flavor, which is so yummy and creamy, melting in my mouth, so enjoyable!
